Chicken Nuggets
1 lb chicken, cooked and chopped
1 egg
1 cup GFCF mashed potatoe "flakes" or babyrice cereal
1/2 cup white rice (or other GF) flour
1 cup rice or soy milk
1/2 cup potato starch
1/2 cup tapioca starch
1 cup corn meal or brown rice flour
1 tsp baking soda
Various spices to taste (we like Lawry's seasoned salt)
Oil for frying
Mix chopped chicken, milk, egg and potato flakes. You should get a meatloaf like consistancy. You can add more flakes or more milk to get a good "form". Form mixture into balls and flatten into nugget shapes.
Mix baking soda, flours and spices and coat nuggets with the mixture.
Heat oli in skillet and cook nuggets until browned and crispy.

Chicken Quesadillas
Again this is a big recipe since we freeze some for later. I'd imagine it's easy to halve.
4 cups chicken meat pulled off the bone and chopped slightly.
1 28oz can crushed tomatoes
2 onions
4 peppers
20 corn tortillas-taco size (or you can make flour ones per Bette Hagmans recipe)
1 tbsp chili powder
1/2 tsp oregano
1/2 tsp salt
1 can refried beans
Simmer tomatoes, spices and salt until slightly thick.
Add chicken and simmer about 5 minutes more.
Chop onions and peppers. Saute in fleshmans or oil along with a bit of salt.
Assemble by placing a large spoonfull of refried beans on a tortilla, spreading and then putting about 1/2 cup of chicken mixture on that.
Top with onion and pepper mixture and place another tortilla on top.
I wrap them in foil and put in plastic bags to freeze them.
The recipe calls for cheese and flour tortillas but they come out fine this way.
For a meal I make plain rice and add a bit of salsa to it. I also top the quesadillas with some chopped lettuce and more salsa and guacamole (I make it by mashing avacado and adding 1 tsp garlic powder and gfcf mayo and salsa to make a consistancy and taste I like.).

Gourmet Chili
This makes a BIG batch, I usually freeze half for later. Make the sweet corn bread muffins on the Breads page and you have a meal!
2 chopped onions
4 garlic cloves
3lbs ground turkey or beef
4 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamon
2 tablespoons unsweetened cocoa powder
2 8-ounce cans tomato sauce
1-2 cans kidney beans
1-2 cans pinto beans
1 tablespoon dark molasses
2 cans gf broth
2 tablespoons balsamic vinegar
Saute onions and garlic. Add meat and cook until no longer pink.
Add the rest of ingredients and bring to a boil then simmer for 2 hours.
You can thicken with a bit of corn starch or other gf four if necesary.

Noodles with Spicy Peanut Sauce
1/2 lb rice noodles (rice spaghetti works well or I have used the dried "cellophane" noodles I get at the regular grocery)
1 1/2 tbsp fresh ginger (or 1 tsp dry)
1/2 tbsp sesame or other oil
3 tbsp GF soy sauce (got mine at Miss Roben's)
3 tbsp boiling water
1/4 cup peanut butter
Cook noodles and rinse in very cold water.
Mix ginger, oil, soy sauce and water.
Add peanut butter and stir until smooth.
Add sauce to cooled noodles.
I have added snow pea-pods and/or broccoli although they usually just get picked out. :)

Mock Risotto
1 cup Arborio Rice
4 cups HOT chicken broth
1 tbl olive oil
Salt to taste
Saute the arborio rice in the olive oil.
Add 1 cup of hot broth to rice. Stir until liquid is absorbed.
Repeat with the other 3 cups of broth.
Serve as a side dish or add chicken to make it a main dish.

Mock Taco Bell Tacos
1 pound lean ground beef
1/4 cup GF flour
1 TBL chilli powder
1 tsp salt
1/2 teaspoon dried minced onion
1/2 teaspoon paprika
1/4 teaspoon onion powder
dash garlic powder
1/2 cup water
12 taco shells
2 cups shredded lettuce
In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder and garlic powder. Use your hands to thoroughly mix the ingredients into the ground beef.
Add the seasoned beef mixture to the water in a skillet over medium het. Mix well with a wooden spoon or spatula, and break up the meat as it cooks.
Heat for 5 to 6 minutes or until browned.
The finished product should be very smooth and somewhat pasty with no large chunks of beef remaining.
Heat up the taco shells in a 375 oven for about 5 minutes.
Build each taaco by spooning 2 to 3 tablespoons of the meat into a warm shell.

Pork Chop Casserole
3/4 cup water
1 package Lipton onion soup mix
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 cups peeled and thinly sliced potatoes
2 peeled and sliced onions
4 sliced and cored apples
1 1/2 pounds pork chops, trimmed
Preheat oven to 375. In a small bowl combine water, dry onion soup mix, brown sugar, cinnamon and nutmeg. Stir until mixed and set aside.
Layer alternately potatoes, onions, peeled apples and pork chops. Pour onion soup mixture over all. Cover losely with aluminum foil and bake for 1 1/2 hour or until pork is tender.
Uncover for the final 10-15 minutes to allow casserole to become crips.

Roasted Chicken
1 Roaster chicken (the 6-8 pounders)
Rinse, clean out the guts, and...
Stuff it with (you don't eat this stuffing, it just makes the chicken taste good):
1 apple, coarsely chopped into 5-7 pieces
1 onion, coarsely chopped into 5-7 pieces
1 lemon, cut in fourths
3 sprigs rosemary
3 sprigs sage
6 sprigs thyme
Rub the outside with CF margarine. Salt the outside well, cover with foil, and bake in 375 oven.
After an hour, remove the foil, lower the oven to 350. Bake another 1 and 1/2 to 2 hours, depending on how much the chicken weighs (check the baking directions on the plastic wrap of the chicken.)
This makes a great "comfort food" main dish! And the leftovers can be thrown into the mock risotto for a delicious second meal the next day!

Sweet and Sour Meatballs
3lbs ground beef
1 cup gf breadcrumbs
12 rice snaps crackers
2 cloves garlic
1 oinion minced
3 eggs
Crush the rice snap crackers.
Mix all ingredients until well blended.
Form into balls about 1 inch in diameter (makes about 48).
Place on baking sheet and bake at 350 for about 15-20 min. Drain on paper towels.
Place meatballs in pan along with:
1 cup ketchup
4 tbsp mustard
1/2 cup brown sugar
2 tbsp gfcf Worchestershire Sauce
16 oz can crushed pinapples
and cook until flavors are well blended.
