Either of two times of the year when the sun is at its greatest distance from the celestial equator. The summer solstice in the Northern Hemisphere occurs about June 21, when the sun is in the zenith at the tropic of Cancer; the winter solstice occurs about December 21, when the sun is over the tropic of Capricorn. The summer solstice is the longest day of the year and the winter solstice is the shortest.
Summer vacations, graduation parties, weddings - fun at the beach, swimming pools, camping in the woods - picnics and ice cream cones!

The unofficial beginning of summer is Memorial Day... then school's out and you just KNOW it's summer!!! The official first day of summer is
summer solstice - the longest day of the year for those of us who live in the U.S. The word solstice comes from the Latin language word "sol" which means sun and "sistere" which means to stand still, so in ancient times, it appeared that the sun was standing still because it was out there so long, thus the word solstice! Here are ways some people celebrate the summer solstice:

We usually call him Daddy, Dad, Papa, but one thing we know for sure is that we have LOTS to thank him for. Find out all about the beginnings of Father's Day! Then, depending on your age, go to a website for ways to celebrate his day - Yahoo has lots of ideas for bigger kids.
For many of us, dad is our hero! He's right up there on the list of people we most admire. Read about some famous dads who are heros at Famous Heros.  Kid's Domain also has some fun ways to celebrate Father's Day! I'll tell you a little secret - one thing that dads always REALLY appreciate is a "promise note" with a special job or list of things you will do for him - like mowing the lawn or helping him wash the car! Billy Bear has a sample note with some good ideas for helping dad.
Our U.S. flag got lots of attention this past year, didn't it? Do you know much about our flag? Find out about National Flag Day then show your family how knowledgeable you are about the history of that day.

Here's a recipe granni got from All Recipes:
Bean Burritos - try them - they're super easy to make and delicious!
1 can (16 ounces) fat-free refried beans
1/2 cup salsa
1/2 teaspoon chili powder
8 fat-free flour tortillas (8 to 10 inches in diameter)
1 cup shredded lettuce
1/2 cup shredded Monterey Jack cheese (2 ounces
Refried Bean Burritos
Ingredients:
Directions:
1.  Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.
    
2.  Spoon about 1/4 cup of bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with addiditional salsa if desired. Serves 4
