Chicken Taco Bake

This recipe has been in our family for more than 10 years.

It's a great way to use leftover chicken or turkey.


 

Ingredients

  • 1 14-1/2 ounce can mild enchilada sauce
  • 1 can cream of mushroom soup
  • 3 cups chicken or turkey, diced
  • 1/2 cup onion, chopped
  • 6 ounces crushed frito chips
  • 1 cup cheddar cheese
 

Directions

  1. Mix enchilada sauce, soup, onion, and chicken.
  2. Spray 9 x 13-inch casserole dish with nonstick cooking spray.
  3. Cover bottom of dish with half of frito chips and top with the mixture.
  4. Sprinkle with cheddar cheese and then add the remaining frito chips.
  5. Bake 35-40 minutes at 375 degrees.

Yield: 4-6 servings.
