Hobo Potatoes

This delicious barbecue recipe is a good one to take to a picnic - put the ingredients into a foil packet and cook it at the picnic without making a big mess.

 

Ingredients

  • Cooking oil or nonstick spray coating
  • 8 cups thinly sliced potatoes (about 2 pounds)
  • 1 large green sweet pepper, chopped (1 cup)
  • 2 medium onions, sliced and separated into rings
  • 3 cups shredded processed American cheese (12 ounces)
  • 4 slices crisp-cooked bacon, drained and crumbled
  • Salt and pepper to taste

Directions

  • Tear off two 36x18-inch pieces of heavy foil. Fold each in half to make two 18-inch squares. Lightly coat each foil square with cooking oil or spray with nonstick coating.
  • In the center of each foil square, layer one-fourth of the potatoes, half of the sweet green pepper, half of the onions, and one-fourth of the cheese. Layer remaining potatoes and cheese. Top with bacon. Sprinkle with salt and pepper.
  • Bring up opposite foil edges; seal with a double fold. Fold in the remaining foil edges to completely enclose the potatoes, leaving space for the steam to build.
  • Grill packets in a covered grill over medium heat for 30-35 minutes or until potatoes are tender. Makes 8 servings.
