Welcome to my country kitchen. I really hope you have enjoyed your stay at our cyberhome. My goal here in the kitchen is to provide all of you working mothers (at home or at the office) with very easy and fast recipes to make on the go. If your household is anything like mine, you don't have all day to slave in the kitchen and you really shouldn't have to. I hope you enjoy these recipes and I would love to hear from you. B.B.Q. Hamburger

1 lb ground beef
1 tbsp oil or Crisco
1 chopped Onion
1/2 cup catsup
2 tbsp sugar
2 tbsp vinegar
1 tsp salt

Brown meat in oil with onion. Cook until golden brown. Add rest of ingredients. Mix well. Cook over low heat for 30 minutes. Serve on hamburger buns.



Baby Pizzas

4 oz of grated mozzarella or cheddar cheese
1 jar of pizza sauce
1/2 lb ground beef OR package of sliced pepperoni
1 loaf of french bread OR package of hamburger buns

Brown ground beef (if using it). Divide french bread in half (if using it). Spread pizza sauce on french bread or individual hamburger buns. Sprinkle cheese. Add meat or pepperoni. Sprinkle another dab of cheese on top. Bake at 350 degrees for about 8 - 12 minutes (depending on the size of your oven). Cut french bread up into small slices. This is a great meal for a prep time of approximately 20 minutes!



Bean Burritos

1 can refried beans
1 lg package of grated cheddar cheese
1 package of flour tortillas
1 lg onion
1/2 cube of butter

Chop onion. In pan, mix beans, butter, onion and 3/4 of cheese. Heat until well mixed. Fill shells with mixture, roll & put into cake pan. After shells have been filled, spread remaining cheese on top. Heat before serving.



Cheese and Chicken Enchiladas

1 medium onion (chopped)
2 tbsp of margarine
1 1/2 cups shredded cooked chicken
1 jar picante sauce
8 6" flour tortillas
2 cups shredded cheddar cheese

Heat oven to 350 degrees. Cook and stir onion in large skillet until tender. Stir in chicken, 1/4 cup of picante sauce and 1 cup cheddar cheese. Spoon chicken mixture into the center of each tortilla. Roll up, place seam side down into 12 x 7 inch baking dish. Top with remaining Picante sauce and cheese. Bake 15 minutes.



Chicken Mozzarella

5 boneless chicken breasts
1 lg jar prego spaghetti sauce
1 (8oz) package of mozzarella shredded cheese
1 tsp garlic salt
4 tsp margarine

Fry chicken in margarine and garlic salt until tender; drain. Pour spaghetti sauce over chicken and add the cheese. Cover and simmer until cheese is melted.



Creamy Tuna Casserole

1 can of cream of mushroom soup
2 cans of tuna (drained)
1 tsp vegetable oil
1 (8oz) package of shredded cheddar cheese
1 small box of elbow macaroni noodles
Heat oven to 350 degrees. In a skillet, simmer tuna with oil. Brown tuna (takes about 5 minutes). In a pot of water, boil noodles until tender. Drain noodles. Pour noodles and mushroom soup into skillet with tuna. Mix all together. Pour mixture into baking dish. Top with cheddar cheese. Bake in oven for about 8 minutes.



Corn Dogs

(Our Favorite)
1 package of hot dogs
wooden sticks (about 8 to 10)
1 cup bisquit mix
1/3 cup cornmeal
1 egg
2 tbsp sugar
milk

Combine bisquit mix, cornmeal, egg and sugar. Add enough milk to make it batter consistency. Coat hot dogs well with batter and fry in 2 inches of hot oil.
