Asparagus with Scallion Butter and Bacon
INGREDIENTS
3/4 lb Fresh asparagus  (2 bunches should do it)
1/4 lb bacon - cooked crisp and crumbled
1.5 sticks of unsalted butter a bit softened
2 tbs finely chopped scallion (green onions)
1 tsp finely chopped garlic
salt and pepper to taste
METHOD
This one is really a no-brainer,  and is actually a forum to special butters.

You can really add any aromatic herbs or spices to flavor butter, then spread it thickly on wax paper and roll it up.  It keeps for almost a month in the freezer, and when you need it, just slice off a chunk and roll it back up again. 

In a small fry pan with a little olive oil, lightly saute' the scallion and garlic just until you release all the aromas... (under 2 minutes)  put this aside to cool.

Cream the butter in a mixer and add the scallion, garlic a very little salt and fresh ground black pepper. 

Steam the Asparagus until tender but never until mushy... a little crispness is good with steamed veggies...

Top the asparagus with the scallion butter and the crumbled bacon..
I also like to serve this with crumbled feta cheese or another mild goat cheese.
