Chocolate Mousse Tarts
Ingredients:

     400g     'Dark' Chocolate (I like Dove Dark or Toblerone)
     4          eggs, separated
     2tsp      sugar
     3tsp      cognac or brandy (or just use vanilla... wuss.)
     2 - 1/4  cups whipping cream
     8          single serving tart shells, make your own or buy ready made
    
Method:

     Melt the chocolate in a double boiler...  never scald your chocolate!
     In a large bowl, beat egg yolks and sugar until pale (around 5 minutes)
     Beat in the cognac, then the chocolate mixing very well

     Beat cream in another bowl until soft peaks form. Fold in chocolate
          until well mixed, don't deflate your cream!
     Change beater paddles and beat egg whites in another bowl until stiff,
          but not dry:  fold into chocolate mixture.

     Spoon mousse into tart shells and chill until set... (around 30 minutes)

     makes 8 tarts.. garnish with fresh mint and a bit of powdered sugar.
     Palooka has been known to eat chocolate tarts such as these, but
     would never admit to such a thing.
