Stuffing Ingredients: Bacon, diced 1/2 cup Red Onion, diced 1/2 cup Red Bell Peppers, diced 3/4 cup Butter, melted 3/4 cup Breadcrumbs, dried 3/4 cup Salt and pepper to taste Worcestershire sauce to taste Cherrystone clams, 2 and 1/2 dozen Lemon, cut into 6 wedges 1 each Fresh chopped parsley, 1/4 cup Method: Cook the bacon over medium heat until the fat is completely rendered and the bacon is crisp. Add the onions and peppers to the bacon and sauté over medium-high heat for approximately 2-3 minutes or until the onions become translucent and the peppers are tender. Add melted butter and breadcrumbs. Season the mixture to taste with salt, black pepper and Worcestershire sauce. Cool the breadcrumb mixture completely. Open the clams with a clam knife and discard the top half of the shell. Loosen the meat from the lower shell with the clam knife. Place the clams on a baking sheet and top each clam with a tablespoon of the breadcrumb mixture. Broil the clams until they are thoroughly cooked, the breadcrumb mixture is crisp 5 clams each, serves 6 - Garnish with parsley and lemon wedge..
