Broiled Eggplant with Provolone |

INGREDIENTS |
|

|
1 large eggplant, cut crosswise into 1/2 inch rounds 3/4 to 1 cup Good Season's Italian Dressing (premade from the pouch) 1 tbsp dried Rosemary (use a bit less if fresh) 1 tbsp dried oregano 1 cup marinara sauce (use the 5 Brothers brand.. I like it best) 12 slices (approx) provolone cheese 12 tbsp grated parmesan cheese

lightly olive oil a large baking sheet. Brush both sides of the rounds generously with the dressing then arrange on the prepared sheet. Sprinkle with rosemary and oregano. let stand and marinate about 30 minutes.
Preheat the broiler. Broil eggplant rounds until brown and cooked through; about 5 minutes per side.
Set oven to 450 degrees. (allow some time for cool-down to baking temperature) Top each eggplant round with about 1 tbsp 5 Brothers Marinara sauce. Place 1 provolone slice on each round. (kinda trim it to fit..) sprinkle with 1 tbsp Parmasan.
Bake until cheeses are melted and eggplant is heated through.. ('bout 5 minutes)
Serves 4 side dishes...
I like this recipe because its made from stuff we all have sitting in our pantry,, well, cept the provolone and the eggplant....
