canola or other light oil for frying |

soy sauce |

fresh lime juice |

fine granulated sugar |

beer (I like Sam Adams ale, don't use dark beer) |

green beans, trimmed |

METHOD |
|
|
|
heat 2 inches of oil to fry in a heavy 4 quart pan.
while oil is heating, make the dipping sauce by combining the soy sauce, lime juice and sugar. Add some finely chopped green onion and a few sesame seeds to the sauce. Sauce is served in a shallow bowl. Whisk the flour and sesame seeds with the beer until batter is smooth.
Coat about 10 beans at a time with the batter. Add to the fryer one at a time to prevent them from getting stuck together. Cook until golden brown, remove from the oil with tongs, salt to taste and drain beans on a paper towel. Coat and fry the remaining beans in the same manner.
Serve with dipping sauce as an appetizer. Best served hot!
