Ham with Sweet Potatoes and Apples

4 medium sweet potatoes or one 18-ounce can sweet potatoes, drained
2  1/2-inch thick slices lower-fat, lower-sodium cooked ham , trimmed of fat ( about 12 ounces)
2 medium apples
1 tsp finely shredded orange peel
3/4 cup orange juice
2 tsp cornstarch
1 tsp. reduced sodium soy sauce
1 tsp grated fresh ginger root
1 clove garlic, minced
Snipped parsley (optional)

Peel and quarter fresh sweet potatoes. In a large covered saucepan
cook potatoes in a small amount of boiling water for 15 minutes or until
almost tender. Drain.
Cut each ham slice in half. Core apples and cut each apple into 8 wedges.
Arrange drained sweet potatoes and apple wedges in a  2-qt rectangular
baking dish. Arrange ham slices on top of sweet potatoes and apples.
In a small saucepan combine orange peel, orange juice, cornstarch, soy
sauce, ginger root and garlic. Cook and stir until bubbly and thickened.
Pour over ham in dish.
Bake covered, in a 375 degree oven for 15 minutes. Uncover and bake about
10 minutes more or until potatoes and apples are just tender.
If desired, sprinkle with fresh parsley. Makes 4 Servings.
