Recipes
Below are some family recipes that I am willing to share to anyone who will appreciate them. Please don't strangle me if they don't work out right though!! I've split them all into sections (entrees, mains and desserts)
Entrees
Satay Scrolls
1 Teaspoon Oil
1 Onion, finely chopped
1 Clove Garlic, chopped
1 Teaspoon Tumeric
1 Teaspoon ground Cumin
1 Tablespoon sweet chillli sauce
1/2 Cup Crunch Peanut Butter
3/4 Cup Cocunut Milk
1 x 1kg Pkt Frozen puff pastry, thawed.
Oven at 220c

Heat oil and cook onion and garlic until soft.
Stir in tumeric, cumin, chilli sauce, peanut butter and coconut milk, mix until combined and thick. Cool mixture slightly.
Lay out 5 sheets of pastry over work surface and spread the satay sauce evenly over them.
Roll each pastry sheet up firmly. Cut each roll into 12 rounds with a sharp knife.
Place the scrolls on greased baking trays and bake for 10-15 minutes or until golden brown.
Bread Cob
1 Large, round bread cob (cut off top for lid)
1 pkt Spring & vegetable soup mix (French onion is good too)
1 Cup of Mayonnaise
300ml Sour cream
1 Pkt frozen Spinach, thawed

Mix together soup mix and mayonnaise. Cover and keep in fridge overnight.
Add sour cream, finely chopped spinach to mayo mix.
Scoop out bread, fill with mixture, put on lid. Bake in moderate oven for approx 20 minutes or until heated though.or 20-30 minutes.
Mains
Mixed Pasta with Chicken & Mushroom Sauce
Serves 10
1 1/2kg fresh mixed pasta - green & white
2 tablespoons olive oil,    100g melted butter
2 tablespoons chopped parsley

For the sauce:
1 1/2kg cooked chicken meat,    350g button mushrooms
50g butter,     600ml milk
bay leaf, parsley, peppercorns, slice of onion, blade of mace
75 g butter, 75g flour
600ml chicken stock,  300ml double cream,  nutmeg, salt & pepper
1 tablespoon fresh oregano
Cut chicken into bite sized chunks. Cut the mushrooms in 1/4's and fry them in the butter.
Place the milk and flavourings together in a pan.Bring to simmering point, the turn down the heat and leave for 10 minutes to infuse.Strain.
Melt butter in a heavy pan, add the flour and cook. for 1 minute. gradually add infused milk & chicken stock, stirring constantly until sauce is smooth and simmering.
Add the chicken and mushrooms and any juice the mushrooms were cooked in. Season, simmer for 5-10 minutes.
Remove from heat. Stir in cream. Add nutmeg and oregano.

Marinated Mushrooms
2/3 cup cider or red wine vinegar
1/2 cup oil
1 teaspoon sugar
2 tablespoons chopped fresh parsley
1 clove garlic
350g baby mushrooms, halved

Marinade over night. Drain excess before serving - yummo!!
2 Tablespoons vegetable oil
1 kg chicken breast fillets
60g butter
1 onion, finely chopped
2 tablespoons plain flour
1 teaspoon curry powder
1 1/4 cup milk
1 red capsicum, finely chopped
1/2 cup tasty cheese, grated
2 eggs, lightly beaten
1/3 cup milk, extra
fresh herbs to garnish

Preheat oven to 180c. Lightly grease a 6-8 cup casserole dish. Heat oil over medium heat in large frypan, cook chicken for 10-12 minutes. Remove from pan and cut into 3cm pieces.
In a large saucepan, melt butter and cook onion for 2-3 minutes. Stir in flour, curry powder and cook for another minute. Remove from heat and gradually stir in milk, stir over low heat until thick.
Add chicken and capsicum to sauce, spoon into prepared dish. Top with grated cheese. Combine eggs and milk, pour over chicken, bake for 30 minutes. Garnish with herbs.
Curried Chicken Bake
Serves 6
Apricot Beef
Serves 4
500g round steak - diced
1 onion, chopped
1 tablespoon tomato sauce
2 tablespoons plain flour
1/2 cup apricot nectar
1 tablespoon brown sugar
1/2 teaspoon curry powder
1/4 cup dried apricots

Toss diced steak into the flour to coat. Lightly fry a little oil. Add onion and cook until soft. Add all other ingredients and simmer gently until steak is tender.
Mini Pizzas
Makes 30
Base:
3 cups self raising flour
50g butter
1 1/2 cups milk/water combined

Make dough, roll out and cut into rounds.

Topping:
1 x 40g pizza sauce (or tomato paste)
250g grated cheese (tasty, mozerella etc)
1 onion, finely chopped
250g diced bacon
1 small can pineapple pieces, drained
You can also add anything else you want - I like chicken, aritchoke hearts, baby corn, fetta cheese, spinach yada yada yada - you get the idea

Bake in greased muffin pans, in a hot oven for about 15 minutes.
OTHER DISHES
Home-Made Mayonnaise
Makes 3 jars
3 large or 4 small eggs
1 cup white sugar
1 heaped tablespoon plain flour
1 level dessert spoon mustard powder
2 cups milk
1 cup white vinegar

Beat together eggs and sugar. Add all ingredients. Whisk together over low heat until smooth and thickened. Pour into hot sterilised jars.
Russian Toffee
90g butter
1 cup sugar
1 tin condensed milk
2 tablespoons golden syrup
1 teaspoon vanilla essence
3 tablespoons chopped nuts

Melt butter, add sugar and golden syrup. Stir well until it boils. Add milk and nuts, boil for approx 20 minutes, stirring all the time until thick. Add vanilla, turn mixture into a buttered dish and when cool, cut into small squares.
2 Minute Cake
1 cup SR flour                               This cake recipe is so easy you can
3/4 cup sugar                                 add other ingredients like cocoa,
1 teaspoon vanilla essence            banana etc
30g butter, melted
3/4 cup milk
1 egg

Bung all ingredients together (mixing well of course). Pour into a lined cake tin and cook in a moderate oven for 30 minutes - ta da !!
Anzac Biscuits
1 cup SR flour
1 cup coconut
2 tablespoons water
125g butter
1 cup sugar
1 packed cup rolled oats
1 tablespoon golden syrup
1 flat teaspoon carbonate soda

In a saucepan bring to the boil - water, golden syrup, butter. Add soda. Mix into dry ingredients. Roll into balls, flatten slightly on a flat baking tray. Bake at 180c for approx 10 minutes,or until golden brown.
