This recipe has been adapted from a low-carb recipe by Kelli in Elmhurst. Faux tatos(low carb. alternative to mashed potatos) Cook cauliflower in Broth or water untill mushy. Puree strained cauliflower in blender. Then add a dollop of sour cream, butter, and chives to taste. |

Mom's mushy Lean Beef Stew beef stew meat...1 1/2# to 2#..quickly sear meat in hot pot. In separate pan Sautee cut up veggies of your choice: carrots, potatoes, onions, tomatoes etc (I think maybe celery could be too fibrous), squashes...no real quantities, tomato sauce, beef broth, pinch of thyme, parsley. Ad to beef and simmer until beef is very tender...(1 1/2 hrs to 2 hrs) cool overnite in fridge. Take off any fat which accumulates and put in blender (add water if there's not enough liquid) Blend until VERY smooth. freeze in ice cube tray. After frozen, keep in plastic bags and take out 1 or 2 cubes or more as needed..Heat in microwave or on top of stove slowly with a little additional water. You can use any herbs or spices that you particularly like as well. This is a great way to keep mushy food around for the mushy food stage, and for after you have had a fill.
