Barbecued Franks & Beans
1 tlbsp butter
1 chopped onion
1 tlbsp flour
1/2 cup tomato sauce
1/2 cup beef broth
1 tlbsp vinegar
1 tsp Worchestershire sauce
1/2 tsp sugar
1/2 tsp chili powder
1 small can kidney beans
1/2 lb. franks, sliced
Saute onion in butter; combine other ingredients, except beans and franks. Stir in onion. Add beans and franks. Simmer, covered until heated through.

Barbecued Pork Chops
Sauce:
4 Tlbsp minced onion
3/4 cup catsup
3/4 cup water
3 Tlbsp vinegar
2 Tlbsp Worchestershire sauce
2 Tlbsp brown sugar
1/2 tsp Tabasco sauce
1 tsp salt
1 tsp paprika
1 tsp chili powder
1/2 tsp pepper
1/4 tsp cinnamon
1/2 tsp cloves
1/2 tsp dry mustard
Bring to a boil and simmer gently until thick (about 15 minutes)

2 lb. stew beef (browned)
2 cans whole potatoes
1 large pkg. frozen tiny carrots
2 large onions, cut in large chunks
4 stalks celery, sliced
1 pkg. McCormack's stew steasoning mix
Water as directed on package.

1/2 cup oil
3/4 cup vinegar
1/2 Tblsp poultry seasoning

Cheeseburger Pie
1 lb. hamburg
1 1/2 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
Brown and drain beef and onion. Stir in salt and pepper. Spread in greased 10" pie plate.
1 1/2 cup milk
3/4 cup Bisquick baking mix
3 eggs
Beat eggs, stir in milk and baking mix. Pour over meat mixture.
Bake at 400 for 25 minutes.
Top with:
2 sliced tomatoes
1 cup shredded cheddar cheese
Continue baking until knife inserted in center comes out clean (5-8 minutes).

Chicken Dinner
Spray inside of crockpot with non-stick spray (Pam)
Empty pkg. of stuffing mix (crumbs and seasonings) in bottom of crockpot and mix in 2 cups boiling water. Pat down.
Arrange 3-4 boneless, skinless chicken breasts over stuffing mixture, and pour one large can chicken gravy over top.
Cook slowly all day.

Honeyed Ham Steak
1 16 oz. can peach halves
1 fully cooked ham steak (about 1 lb)
1/2 cup orange juice
1 Tblsp honey
2 tsp mustard
1/8 tsp allspice
2 Tblsp water
1 tsp cornstarch
Drain peaches, set aside 1/2 cup syrup. Heat fat from ham to coat skillet, then discard fat. Fry ham until lightly browned on both sides (about 5 min.) Add peaches, peach syrup, orange juice, honey, mustard and allspice; heat through (about 5 min.)
Remove everything but liquid from pan. Combine cornstarch and water and stir into hot liquid. Boil 1 minute. Spoon sauce over ham and peaches to serve.

Hot Dog Casserole
2 1/2 cups raw potatoes, sliced thin
1 large onion, chopped
6 hot dogs
4 Tbsp. flour
2 Tbsp. butter
2 1/2 cups tomato juice
salt and pepper
1/2 cup grated cheese
Layer ingredients (except cheese) in buttered casserole dish. Bake at 350 degrees for 45 min.
Sprinkle with grated cheese and bake additional 25 minutes, uncovered.

Meatballs
1 lb. ground beef
1 lb. ground pork
1 lg. clove of garlic, finely chopped
4 Tbsp. chopped parsley
1 tsp. salt
1/2 cup grated cheese
6 slices hard bread, soaked in milk
4 beaten eggs
3 Tbsp. bread crumbs
1/4 tsp pepper
Mix together; shape into balls. Fry in hot fat or microwave.

Meatball-Parmigiana Casserole
1 lb. noodles, cooked
1 small recipe of meatballs (12 - 5)
1 15oz.can beef gravy
1 qt. prepared spaghetti sauce
1 tsp dried oregano
8 oz. cream-style cottage cheese
1 Tbsp Parmesan cheese
In medium saucepan, combine meatballs, spaghetti sauce, gravy, and oregano. Bring to a boil, remove from heat.
In large greased pan, layer half of noodles with half of meatball mixture. Dot with half of cottage cheese; then sprinkle with half of Parmesan cheese. Repeat.
Bake at 375 degrees for 20 - 25 min.

Meatloaf
2 lb. ground beef
1 pkg. dry onion soup mix
2 eggs
1/2 cup ketchup
6 slices hard bread, soaked in milk
Mix all ingredients together thoroughly, press into 8" square pan. Bake at 325 degrees for one hour.

Sausage Egg Casserole
1 ½ lb medium bulk sausage
9 eggs, beaten
3 cups milk
½ tsp dry mustard (or a squirt of regular)
1 tsp salt
3 slices of bread, cut in 1/4 inch cubes
1 ½ - 2 cups shredded cheddar cheese
Microwave broken up sausage until cooked. Drain thoroughly.
In a very large bowl, beat eggs and add other ingredients. Mix well. Add cooked sausage. Pour into 13 x 9 inch pan, sprayed with cooking spray. Cover and refrigerate overnight.
Uncover and bake for 1 hour in pre-heated 350 degree oven.

Quiche Lorraine
1 med. chopped onion, sauted
1/2 lb. cooked bacon, crumbled
1/2 lb. Swiss cheese, cut in small strips
1/4 cup ham, chopped
6 eggs, beaten
1 tsp. salt
1/4 tsp. white pepper
pinch cayenne pepper (optional)
2 1/2 cups half'n'half
1 Tbsp melted butter
Mix eggs, salt, pepper, milk, and butter together.
Place bacon, cheese, ham and onion on the bottom of a 11" Quiche pan (or pie plate), lined with pie pastry, and pour egg mixture over top.
Bake at 425 degrees for 10 min, then at 325 degrees for 20 minutes, or until center is set (sharp knife comes out clean).

Shredded Beef Sandwiches
1 Chuck roast (3 lb)
1/3 cup vinegar
one large onion, chopped
3 bay leaves
1/2 tsp salt
1/4 tsp cloves
1/8 tsp garlic powder
Trim fat from roast, cut up to fit into crock pot. Combine vinegar, onion, and spices and pour over meat in crock pot. Cook on low for 12 hours or until meat is very tender. Drain meat. Skim off ft from juices. Shred meat with a fork. Make sandwiches on french rolls, and use juice for dipping.

Spaghetti Sauce
Crumble and fry:
l lb. hot sausage
2 lb. ground beef
2 large chopped onions
1 chopped green pepper
Add:
2 tsp minced garlic
1 tsp basil leaves
1 tsp thyme
1 Tbsp parsley flakes
1 tsp pepper
2 tsp salt
2 tsp sugar
Make a "tea" of 1 Tbsp oregano and 1/2 cup boiling water. strain and add to sauce.
Add:
1 qt. tomato paste
1 qt. tomato sauce
1 qt. water
Simmer at least 2 hours, stirring frequently.

Taco Pie
1 lb. ground beef
1/2 cup chopped onion
1 env. taco seasoning mix
4 oz. chopped chilies, drained
1 1/4 cup milk
3/4 cup Bisquick baking mix
3 eggs
2 sliced tomatos
1 cup shredded cheese
Brown beef and onion, drain. Stir in seasoning mix. Spread in greased 10" pie plate. Top with chilies.
Beat milk, Bisquick and 3 eggs until smooth. Pour into plate, over meat mixture. Bake at 400 Degrees for 25 min. Top with tomatoes and cheese. Bake until knife inserted in center comes out clean, 8 - 10 min.

Veal Cutlets Parmesan
3/4 lb. veal (or 4 boneless chicken breasts)
2 eggs
3/4 cup bread crumbs
6 Tbsp grated cheese
6 Tbsp oil
1 small can tomato sauce
8 oz. sliced Mozzarella cheese
Dip meat in egg, then in bread crumbs mixed with 4 Tbsp Parmesean cheese. Refrigerate for 30 minutes.
Brown meat - 2 minutes on each side. Place in greased 9 x 13" baking dish. Pour tomato sauce over meat; top with Mzzarella cheese and remaining Parmesean cheese. Bake until hot and bubbly, about 15 minutes.
Broil for a few minutes to brown.
