3-Cup Squid
Noodle Salad with Sesame Dressing
Ingredients
     1kg fresh squid
     10 slices ginger
     5 gloves garlic
     4 sprigs Thai basil
     2 tsp rock sugar
     3 tbsp soy sauce
     6 tbsp cooking wine
     6 tbsp black sesame oil

Method
1. Remove the tentacles and intestines
from the squid.  Butterfly the squid, clean inside, and cut into bite-sized pieces. 
2. Cook the squid in boiling water over medium heat for 3 minutes, drain well and set aside to cool.
3. In a large casserole dish, fry ginger and garlic in sesame oil over high heat until golden-brown.  Add squid and fry for 5 minutes.
4. Add sugar, soy sauce and cooking wine.  Cover and cook until the liquid reduces by 80-90%.
5. Add Thai basil, toss for 1 minute, and serve.
