Hot and Spicy Beef

Ingredients
     800g beef shank meat
     2 spring onions, sliced thinly lengthways
     11/2 tbsp Sichuan peppercorn, roasted and ground
     3 gloves garlic, finely minced
     1 Thai chili pepper, finely minced
     4 tbsp soy sauce
     1 tbsp rice vinegar
     2 tsp sugar
     1 tbsp sesame oil
     2 star anises
     2 dried orange peels
     2 slices ginger
     2 tbsp chopped cilantro (optional)

Method
1. Add star anises, dried orange peels, and ginger to boiling water.  Cover and cook beef over medium heat for 45-50 minutes.  Set aside to cool, and then slice thinly.
2. Mix soy sauce, rice vinegar, sugar, sesame oil, and Sichuan peppercorn in a large mixing bowl.
3. Add beef, spring onion, garlic, and Thai chili pepper.  Toss to coat thoroughly.  Sprinkle with chopped cilantro and serve.
