Thai Mussel Salad |

Ingredients 18-20 live mussels 1 small red onion, thinly cut 1/2 cup sliced cucumber 1 Thai chili pepper, chopped 1/2 cup chopped cilantro 2 tbsp lemon/lime juice 1 1/2 tbsp fish sauce 1 tsp sugar 1/2 cup water 2 tbsp cooking wine Method 1. Wash the mussels, place in a deep saucepan with cooking wine and water, cover and bring to the boil over high heat until the mussels are open. Discard any that remain close. Remove the beard and shells. 2. Mix lemon/lime juice, fish sauce, and sugar in a large mixing bowl. Add mussels, onion, chili pepper, and toss to coat thorougly. 3. Arrange mussels in the middle of a plate covered by cucumber. Sprinkle with roughly chopped cilantro, drizzle excess sauce over the top, and serve. |
