Chicken In Foil Heat oven to 400 degrees Brush chicken with olive oil, sprinkle with salt. Place 2 pared, sliced potatoes around chicken. Add carrot slices and zuchinni and onions to foil. Mix 2 TB Catsup 1/2 tsp basil 1 TB butter and a heavy dash of tobasco sauce. Top foil contents with seasoning mixture. Wrap securely Bake for one hour Sprinkle with Parmesan cheese.
Overnight Steak and Gravy Round steak, cut into serving sizeportions, beat to tenderize. Coat with seasoned flour (salt, pepper, garlic) Brown in oil in hot skillet Place pieces into 'prepared' mushroom soup in casserole dish with/lid. Cook over night or all day (8-12 hrs) at 200 degrees Serve with mashed potatoes, green beans, tomato slices and jello.
Deep fried okra 1 lb fresh okra, wash, drain, cut. Combine 1 cup flour, 1 cup cracker meal, 1 tsp salt, 1/2 tsp pepper in a shallow dish. mix 1 egg, 1 cup buttermilk and 1/2 tsp salt. Add 1/3rd of the okra to the egg mixture at a time. Remove with a slotted spoon and place in flour mixture. Stir gently to coat. Pour 2" of oil into skillet and heat to 375 degrees (between med and medium high heat). Fry till golden. Drain well. Serves 4.
Chipped Beef Cheese Ball In a medium mixing bowl, combine 8 oz softened cream cheese, 1 tsp accent, 1 tsp worchestershire sauce, 6 small chopped green onions. Mix well and form into a ball. Put one small pkg chipped beef into blender and chop. Pat chopped beef to outside of cheese ball. Refridgerate. place on paper doily on plate and serve with crackers. Please remember to let guests know that the dish has monosodium glutinate (MSG) as some people are highly allergic to it.
Crock Pot Venison Ingredients:
Venison round steak
Flour
Oil
Canned tomatoes or mushroom soup or beef broth
Preparation:
Take the round steak and dredge in flour on both sides
Season it to taste.
Brown in on both sides in a small amount of hot oil.
Remove directly from pan to crock pot.
Cover with your choice of tomatoes, soup, or broth. Cook on low for 3, 4, or 5 hours depending on quantity.
Note: Very tender and tasty.
Pastry for ANYTHING INGREDIENTS: 1 1/4 cups all-purpose flour 1/2 teaspoon salt 1/2 cup shortening 3 to 4 tablespoons cold water INSTRUCTIONS: Combine flour and salt in a medium bowl; cut in shortening with pastry blender until crumbly. Sprinkle cold water, 1 tablespoon at a time, evenly over surface; stir mixture with a fork just until dry ingredients are moistened. Shape dough into a flattened disk; wrap in plastic wrap, and chill 2 hours or freeze 30 minutes. Roll dough out to 1/8-inch thickness on a lightly floured surface. Place in a 9-inch pieplate; trim off excess pastry along edges. Fold edges under, and crimp. Prick bottom and sides of pastry shell generously with a fork for a baked pastry shell. (Do not prick if the pastry shell is to be filled before baking.) Bake at 450° for 10 to 12 minutes or until golden brown. Cool on a wire rack. YIELD: Makes one 9-inch pastry shell PREPARATION TIME: 5 min. COOKING TIME: Chill: 2 hrs. (or Freeze: 30 min.); Bake : 10 min.
Quick Whipping Cream Biscuits
INGREDIENTS
1/2 cup butter or margarine
2 cups self-rising flour
3/4 to 1 cup whipping cream*
1/4 cup butter or margarine, melted
INSTRUCTIONS
Cut 1/2 cup butter into flour with a pastry blender or fork until crumbly. Add whipping cream, stirring just until dry ingredients are moistened. Turn dough out onto a lightly floured surface, and knead lightly 3 or 4 times. Roll or pat dough to 3/4-inch thickness. Cut with a 2-inch round cutter; place biscuits on a lightly greased baking sheet. Bake at 400° for 13 to 15 minutes. Brush biscuits with 1/4 cup melted butter.
* 3/4 cup buttermilk and 1 tablespoon granulated sugar, stirred together, may be substituted for whipping cream. YIELD: 1 dozen
Creamy Macaroni and Cheese
INGREDIENTS
1/2 cup butter or margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground red pepper
1/4 teaspoon granulated garlic
2 cups half-and-half
2 cups milk
2 (10-ounce) blocks sharp Cheddar cheese, shredded and divided
1 (10-ounce) block extra-sharp Cheddar cheese, shredded
1 (16-ounce) package elbow macaroni, cooked
INSTRUCTIONS
Melt butter in a large skillet over medium-high heat. Gradually whisk in flour until smooth; cook, whisking constantly, 2 minutes. Stir in salt and next 3 ingredients. Gradually whisk in half-and-half and milk; cook, whisking constantly, 8 to 10 minutes or until thickened.
Stir in half of sharp Cheddar cheese. Stir in extra-sharp Cheddar cheese until smooth. Remove from heat.
Combine pasta and cheese mixture, and pour into a lightly greased 13- x 9-inch baking dish. Sprinkle with remaining sharp Cheddar cheese. Bake at 350° for 20 minutes (bake 15 minutes longer for a crusty top).
Note: I used Kraft Cracker Barrel cheeses.
YIELD: Makes 6 to 8 servings
PREPARATION TIME: 35 min.
COOKING TIME: 20 min.
The Best Southern Fried Chicken
INGREDIENTS
3 quarts water
1 tablespoon salt
1 (2- to 2 1/2-pound) broiler-fryer, cut up
1 teaspoon salt
1 teaspoon pepper
1 cup all-purpose flour
2 cups vegetable oil
1/4 cup bacon drippings
INSTRUCTIONS
Combine 3 quarts water and 1 tablespoon salt in a large bowl; add chicken. Cover and chill 8 hours. Drain chicken; rinse with cold water, and pat dry.
Combine 1 teaspoon salt and pepper; sprinkle half of mixture over chicken. Combine remaining salt and pepper mixture and flour in a large heavy-duty zip-top plastic bag. Place 2 pieces of chicken in bag; seal. Shake to coat. Remove chicken; repeat procedure with remaining chicken, 2 pieces at a time.
Combine vegetable oil and bacon drippings in a 12-inch cast-iron skillet or chicken fryer; heat to 360°. Add chicken, a few pieces at a time, skin side down. Cover and cook 6 minutes; uncover and cook 9 minutes.
Turn chicken pieces; cover and cook 6 minutes. Uncover and cook 5 to 9 minutes, turning pieces during the last 3 minutes for even browning, if necessary. Drain chicken on paper towels; keep warm.
Note: For best results, keep the oil temperature between 300° to 325°. You may substitute 2 cups buttermilk for the saltwater solution.
YIELD: Makes 4 servings
