Black Bean & Tofu Burritos

preparation time: 15-20 min.
serves: 2

  • 1 can of black beans
  • 4 tortillas
  • soy sauce
  • about ¼ lb. tofu, give or take
  • tomato sauce
  • pinch of ground red pepper
  • vegetable oil

    First cut tofu into strips, about ¼ in. wide or so. (You might need more or less tofu, not really sure how much I use.) After you cut the tofu, put it in a bowl with some soy sauce, however much you want. You can let that sit for a few minutes while you do something else (ya might want to take the tortillas out of the fridge now so they won’t break when your rolling them up later). Then, get out a pan, heat up some oil on it, and brown the tofu strips on medium heat. That usually takes about 5 minutes, or a little more. Then turn down the heat to low, and add the beans, pinch of red pepper, and some tomato sauce, however much you want. Let that all warm up for a few minutes. Then divide it up onto the tortillas and put them on a cookie sheet (w/ some foil) and put it into your oven (pre-heated course) for a few minutes, and your done. Voila, black bean & tofu burritos. great. Some people might like salsa or something in them. whatever. anything works.
