PARTS USED
seeds and leaves

Fruit and fresh leaves

Harvesting
The young leaves can be picked at anytime.
Collect the seeds when they are brown.
The roots are harvested in the autumn.

Preserving
The seeds can be dried or added to vinegar.
The leaves are best kept frozen.

CULINARY USES
Coriander seed is good in tomato, meat, and vegetable dishes.
It is used in curry and sauces.

Leaves are added to curries, stews, and sauces.

It is used as a garnish.

Stems can be cooked with beans and soups.

Fresh root is cooked as a vegetable.

When it is grown near anise seed
it speeds up the later's germination and growth.

Use the seed in potpourri.
