Mini Pizza

English muffins (1-2 per person)
Pizza Sauce (6 oz. tomato paste, 8 oz. tomato sauce, tsp. oregano, tsp. basil,      salt, pepper, sugar)
grated cheese
toppings (i.e. pepperoni, tomatoes, bell peppers, mushrooms, olives)


Heat 15-20 charcoal briquettes until red hot.  Place on a sheet of foil, cover with box oven (held open at the bottom 1 inch with a rock/stick).

Create pizza sauce by mixing ingredients together.  Spread on split English muffins.  Top with cheese and toppings.

Place pizzas on an ungreased baking sheet.  Place the sheet on bricks/rocks over the coals inside the box oven.  Bake for 10-15 minutes, or until the cheese has melted.
