PUMPKIN
PIE

What you will need:
2 cups cooked or canned
pumpkin
1/2 teaspoon salt
1 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 mace
1/2 teaspoon ginger
2 eggs
1 cup milk
1/2 cream or evaporated
milk
1 single-crust pie pastry
(see in list of pie recipes/click on pastry pie crusts)
or just buy one that is
ready made in your grocer's freezer.

The Process:
Mix together pumpkin, salt,
sugar and spices. Beat eggs with milk and cream and add to pumpkin, stirring until
blended. Pour into pastry-lined, 9-inch pie plate. Bake in a very hot oven (450° F) for
10 minutes. Reduce heat to slow (325° F) and bake 40 minutes longer or until knife blade
inserted in center comes out clean. Cool on wire cake cooler.
Topping: If desired, top
with whipped cream and pecan halves, yogurt or scoops of vanilla, coffee or butterscotch
ice cream.
