WINNING WAYS IN THE KITCHEN

~ To cut a straight slice of cheese, keep your eye on the part you're cutting from, not on the piece that's being cut off, and you'll cut it straight every time. Try this on bread, too.

~ To speed up salad-making, wash, trim and dry all the ingredients as soon as you buy them. Combine and seal in a plastic bag. At mealtime, simply pull out the bag, add dressing, and the salad is ready to serve.

~ It's easy and economical to make your own microwave TV dinners. After a meal, place leftover servings of meat, potatoes, and vegetables onto heavy, three-section paper plates. Slide the plates into freezer-safe zip-lock plastic bags and freeze. Works great for casseroles, too.

~ Slice French or Italian bread, spread the cut surfaces with garlic butter, and freeze. You'll always have garlic bread on hand to pop into the oven at mealtime.

~ A pizza cutter works great for slicing brownies and one-layer cakes while they're still warm. It quickly makes neat slices.

~ Cookies stay fresher in a cookie jar if you add a slice of bread every other day.

~ If something cooks over in the oven, sprinkle salt on it at once and you'll be able to lift out the mess as soon as the oven cools.


DOUBLING RECIPES

When doubling recipes for main dishes, soups or salads, double amounts of all ingredients except seasonings, then season to taste.


VEGETABLES

Vegetables grown under ground should be cooked in a covered pan.
Vegetables grown above ground, cook uncovered.
To keep mashed potatoes snowy white, add ¼ teaspoon baking powder before the beating.
