Wedding Cakes

I created this wedding cake for
an Oregon couple wanting
a simple look. The bride gave me a
ceramic ornament which I used when making
this cake top. The cake was frosted smooth
to look like a rolled fondant but was
actually buttercreme. I used fresh flowers
and greenery. This twigs were wired
in a wreath shape and ivy was
wrapped around it to give
the cake an earthy feel.
This wedding cake has Rolled buttercreme frosting which although still has the look
of Rolled Fondant
it has a much a much less sweet taste.
I made the flowers from three shades
of ivory colored Gum Paste.
(Gum Paste is an edible clay like
material which dries to a hard, brittle
texture and can last for years when kept dry)
Here is another Rolled buttercreme cake created to match
the style of the brides gown. The ribbon used around the base
of each tier was also used to decorate
around the base of the cake. I used royal frosting (this gets hardened when it dries) to make the "lace" pieces and also
for the embroidery like decorations on the sides
of each cake. I made the flowers out of Gum Paste around
the base of the bottom cake I made a "run sugar" collar.

matched the pattern
of the bridal gown.

in this view the
gum paste flowers

better. The gum paste
roses were hand
molded and
after they had dried for
a few days I buushed
some powdered food
coloring at the base of each
in a shade to match that
of the wedding party.
This wedding cake is also done
with rolled buttercreme
and features
royal icing lace work and
royal icing extentions.
(this is done by first appling a
border of royal icing, and adding several
layers one on top of the other
until you have a ledge, then royal icing
strings are applied that actualy stick out from the cake)

and around the corners of the cake...
This cake has buttercreme frosting
and silk flowers with
thin black ribblons trailing off the side of
the cake. To add black to the cake without making the cake look unpallatable
I added just a touch of black frosting in the
decorations.
I used to get a lot of
requests for this design....
silk flowers in what ever color was
appropriate to the wedding theme
and matching trim on the cake
made this design versatle.
These next two pictures are
of a rolled buttercreme
frosting tinted peach
color and decorated with more
gum paste roses and
gum paste ivy leaves which have
pale green food coloring
brushed on them.
Here is another simple design,
bands of frosting on the
sides of the cake
help this look simple
and understated.
The choice of flowers
were usually silk
and I made them
in advance.
