My husband & myself are diabetics and I want to share some of our favorite recipes for diabetics

             Sugarless Pineapple Pie

1 - large can crushed pineapple in its own juice
1 - large (1.5oz) dry sugar-free instant vanilla pudding mix.
1 - envelope dry D-Zerta Whipped Topping mix.
1 - 8oz container Fat-free Sour Cream

Mix all ingredients together and pour into a baked pie shell.
Chill
Serves 8

This is Malcolm's all time favorite

                  Cherry Delight

  1 - can sugar-free cherry pie filling
1/2- box Sweet'N Low yellow cake mix (dry)
      low-fat margarine to dot top of cake mix
1/4- cup of chopped pecans(optional)

Pour pie filling into square baking dish. Top with dry cake mix,   butter & pecans.

Bake 30 minutes    

              Sugar-Free Banana Pudding

1 - box Murray's Sugar Free Vanilla Wafers
1 - large box sugar-free vanilla instant pudding mix
1 - container of Fat-free frozen whipped topping.
3-4 banana's

Line an oblong dish with the vanilla wafers along sides & on
bottom.  Slice your banana's over the cookies.  Mix the pudding
according to directions on box skimmed milk & pour over banana's.
Top with whipped topping.

                       Jello Jigglers

     4 - pkgs 3oz or 2 pkgs 6oz sugar-free gelatin any flavor
  2 1/2 - boiling water or apple juice

Stir boiling liquid into the gelatin in a large bowl, stir
3 minutes until completely dissolved.  Pour into a 13" x 9" pan.
Refrigerate at least 3 hrs. or until good & firm. Cut into
squares & store in refrigerator.
