*Cocktail Meatballs* 2 Lbs. hamburger, 1 medium onion {chopped}, 1 C. cracker crumbs, 1/2 C. skim milk, 2 eggs, dash of garlic powder, pepper to taste. Sauce: 1 1/2 C. ketchup, 1/3 C. vinegar, 1/4 C. yellow mustard, brown sugar substitute equivalent to 3/4 C, brown sugar. Mix ingredients together. Roll into walnut size balls & place in 9x13 inch baking dish. Sauce, mix in glass measuring cup. Pour over meatballs & bake in 350 degree oven for 1 hour. {Yields 60 Meatballs} |

*Sloppy Joes* 1 lb. hamburger 1 onion, chopped 1 green pepper, chopped 2 tbsp. brown sugar 1 tbsp. mustard 1 tbsp. vinegar 1/2 tsp salt 3/4 C. catsup Dash of red pepper Black pepper to taste Brown hamburger and drain off fat. Add remaining ingredients and simmer for about 30 to 35 minutes. Serve on hamburger buns.

*Rib Roast* {Even for the Diabetic} Preheat oven to 400* Stand the roast, fat side up, on a rack in a foil-lined roasting pan. Add no water. Insert a meat thermometer into the center of the roast, making sure point rests on meat. Roast uncovered on 400* for 15 minutes. Lower heat to 375*. Roast until thermometer reads 140 degrees for rare (about 23 to 25 minutes per pound), 160* for medium (about 27 to 30 minutes per pound), and 170 degrees for well done (about 32 to 35 minutes per pound). Place roast on warm serving platter. Season with salt & pepper and slice. Serves 8 to 10. Serving size: 3 ounces no bone Exchanges: 3 medium-fat meat 1-fat Calories: 270 |
