Breakfast 1/2
*German Pancakes*
1 egg {beaten}, 2 egg-whites {beaten fluffy}, 1 tbsp sweetner or sugar, 3tbsp all-purpose flour, 3/4 C. heavy cream.
Combine egg, & egg-whites with flour in blender & process until smooth at medium speed, adding rest of the ingredients, blending another minute. Heat skillet til grease is sizzeling, pour batter 1/4 cup at a time into skillet. Heat until bubbly & turn over until golden brown.
{Serve hot, with fruit or syrup}.
*Granny's Puffy French Toast*
1 egg {beaten}, 2 egg-whites {beaten until fluffy}, 1 C. all-purpose flour, 2 1/2 tsp baking powder, 1/2 tsp salt subtitute, 2 tsp sweetner or sugar, 1 tsp light brown sugar, 1/2 C. heavy cream, 2 tbsp margarine {melted}, white bread/dried overnight, 1/2 C. olive oil.
Combine beaten egg, and beaten egg-whites fluffy, sift together flour mixed with baking powder, salt, sugar & brown sugar, beat until smooth. Add heavy cream & butter. Beat until combined, don't overbeat. Slowly heat olive oil in a heavy skillet. Dip bread into batter to coat, Let bread sit in batter 4 minutes on each side. Saute` battered bread for 3 minutes on each side or until golden brown & puffy.
{Serve hot with fruit or syrup}.
*Gluten-free Crepes*
1 C. brown rice flour, 1 egg replacer for 3 eggs, 1/4 to 1/2 C. water, 1 to 2 tbsp olive oil.
Mix together 1 cup brown rice flour, egg replacement & water in a bowl. Pour into a hot sizzeling skillet coated with butter or olive oil, & cook each side throughly until lightly browned on both sides. Choose your favorite filing, berries, strawberries, blueberries, nuts etc.
*No Carb-Maple Syrup*
Sweetner for 2 C. sugar, 2 tbsp maple flavor, 1/2 tsp guargum.
Heat water with sweetner & flavor, until boiling. Add the guargum to thicken the mixture.
*Low-Carb Crepe*
2 eggs, 1/3 C. cream, 1/3 C. water, 2 tbsp butter {melted}, 2 tbsp protein powder, Melted butter, cooking oil or spray.
Combine beaten eggs, cream, water & 2 tbsp melted butter. Mix with electric mixer or wire whisk until well blended. Add protein powder & beat until smooth. Heat skillet til sizzeling hot. For each crepe' pour in just enough butter about 2 tbsp for 8-inch pan. Cook crepe on both sides til lightly browned.
*Crepe*
2 eggs, 2 egg whites {beaten}, 1 C. flour, 1/2 C. milk, 1/2 C. water, 1/2 tsp salt subtitute, 2 tbsp melted butter.
Measure all ingredients into a blender & blend for 30 seconds, scraping down sides. Blend 15 seconds more. Cover & let sit for 1 hour. {This helps the flour absorb more of the liquids}.
{Makes 12 to 14 crepes}.
For sweeter crepe add 2tsp sugar & 1 tsp vanilla.
Eat plain with powdered sugar or add fruit.
