FEATURED RECIPE

Vegetable Medley

Ingredients:

  • 1 bag of California vegetables (Broccoli, Califlouer, and carrots)

  • 1 8oz. package of shredded swiss cheese

  • 1 small package of sour cream  

  • 1 small can of french fried onions

  • 1 small can of cream of mushroom soup

  • 1/4 tsp. black pepper

Directions:

  1. Combine vegetables with 1/3c of sour cream, pepper, 1/2c swiss cheese, soup, and half the can of french fried onions in a large mixing bowl.
  2. Once mixed, pour contents into a casserole dish and bake for 30 minutes (or until bubbly) covered in a 350 degree oven.
  3. Remove from heat and top with 1/2c cheese and the remaining french fried onions.
  4. Cook uncovered for an additional 5 minutes, or until cheese is melted.
Serves: 6

Prep/Cook Time: 40min.

Seasoned Iron

I remember the first time I bought a set of cast iron cookware.  I had them for about a month and then threw them out because they got all rusted.  I didn't know you had to "season" them, now I know better.  If you take care of them, they'll last a lifetime.  Here's a recipe on how to season them, and some tips on how to take care of them.

Kitchen Tips

For the ideal disposable pastry bag, use heavy-duty, quart-sized self-sealing plastic bags fitted with a cake decorating coupler and tip. The filling can't work its way out of these bags because they're sealed tight.


To melt chocolate, chop into small pieces and microwave 30 seconds at a time until chocolate looks shiny. Stir and microwave 30 seconds longer, if necessary.


To get more juice out of lemons, limes and other citrus fruits, microwave them on HIGH for 30 seconds, then roll them on the counter to burst the juice cells; slice and juice.


To save leftover wine and canned broth: Divide leftovers among ice cube tray compartments; when frozen, transfer cubes to self-sealing bags, label and date, and use in sauces and stews.


To save leftover canned tomato paste: Place level tablespoons-full on a foil or plastic-wrap lined pan; freeze until solid. Transfer the frozen paste to a self-sealing freezer bag, label and date. The frozen paste can be added directly to hot sauces, soups and stews.
