However we are excited to be able to offer organic beef to the public soon. Our Miniature Herefords are an excellent beef choice for several reasons. Our Miniature Herefords are raised organically with NO hormone injections/transplants, antibiotics, or medicated feeds, and they are never placed in a feedlot environment. Just good old Wyoming grass, hay, and air!
Another outstanding feature of Miniature Herefords is that you as the consumer are getting more "beef for your buck". According to The National Western Stock Show's 2006 evaluation of Miniature Herefords they have an average rib eye area of 1.5" per 100lb live body weight, compare this to the commercial beef average of 1" per 100lb live body weight! They also have an excellent carcass yield of 55% to >60% on grass fattened animals. Once again compare this to a commercial Angus steer (considered to be the finest butcher animal available). A commercial Angus steer raised in a feedlot environment will have an average carcass yield of 60%. As you can see Miniature Herefords are right in line with carcass yield and superior in rib eye area with the beef that is considered the "Nation's best".
What does all of this mean in terms of take home beef? Well to make numbers easy let's consider a 1,000lb live weight commercial Angus steer, you would expect to take home approximately 600lbs of meat or for one side 300lbs. Compare this to a 500lb Miniature Hereford steer where you would take home 300lbs or on the side 150lbs of meat. All with the security of knowing that the Miniature Hereford steer was born, raised, and slaughtered in Wyoming ORGANICALLY! The Miniature Hereford take home is more in line with what an average family can eat within a year without wasting meat to freezer damage.
