Beltane Cake

Ingrients:
1 cup sugar
1/2 pound butter
1/2 cup honey
5 eggs
6 fresh rose petals (may use edible dried ones)
2 cups flour
2 tablespoons freshly grated lemon peel
2 1/2 teaspoons freshly squeezed lemon juice
pinch of basil
1 teaspoon rosewater or 1/4 teaspoon of almond or 1/2 teaspoon or lemon extract

Heat oven to 350 degrees.
Spray a 9 X 11 pan with non-stick spray and lightly dust with flour.
Beat first 4 ingredients until fluffy. Add flour. Stir in lemon peel, lemon juice, basil, rosewater. Mix until smooth. Carefully add fresh flower petals and gently fold them in.
Pour into pan and bake for 25-40 minutes.

Serving suggestions: Top with fresh fruit or homemade ice cream.
