Zucchini Bread

Ingredients:
3 eggs
1 tablespoon of vanilla
2 cups sugar
1 cup of vegetable oil
2 cups of flour
2 teaspoons of baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon baking powder
2 medium, grated, unpeeled zucchini
1 cup chopped walnuts

Preheat oven to 350 degrees.

In a mixing bowl, beat eggs till frothy. Beat in sugar, oil, and vanilla until thick and lemon colored. Sift in flour, cinnamon, baking soda, baking powder and salt. Fold in zucchini and walnuts. Pour mixture into 2 greased and floured loaf pans. Bake for 1 hour.
