Argyle Cake

Green Army version of Boiled Fruit Cake.

Ingredients

19 oz Green Glace Cherries
3 oz Large Walnut pieces
6 oz Brown or White Sugar
4 oz Butter
1 teaspoon Mixed Spice
1/2 teaspoon Bicarb of Soda
1/2 pint of Milk
12 oz Self Raising Flour
2 size 3 eggs


Change the sugar to white for more contrast
or substitute some of the cherries with Sultanas for different flavour
Method:

Put Fruit, nuts, sugar, butter, spice, bicarb, and milk into a large saucepan. Bring to the boil and then simmer for five minutes. Cool to blood heat and then stir in the remaining ingredients (Flour and eggs) until well mixed. Put into a greased 10" baking tin. Bake near the top of the preheated oven for 40 mins at 325F then 90 minutes at 300F. Cool for 5 mins then turn on to a rack. Do not allow to dry out while cooling.
