Christmas Red Pickles
Ingredients: 1 gal large to ex-large cucumbersPreliminary Preparation ingredients:
1 oz. red food color 1/2 tsp. alum 1 C. vinegar 1 C. pickling lime
Syrup ingredients:
2 C. vinegar 2 C. water 7 C. (5lbs) sugar 1 C. red hot cinnamons candy 4 sticks cinnamon
Preparation: Peel, remove seeds and slice large cucumbers. Cover with cold water and add 1 C. lime. Leave soak for 24 hours. Then drain and rinse. Cover with clean cold water and let soak for 3 hours. Mix in 1 C. vinegar, alum, and food color to pickles. Heat and simmer for 2 hours. While cucumbers simmer, make red hot syrup of the 2 C. vinegar, 2 C. water, sugar, red hots, and stick cinnamon. Heat until red hots dissolve. Drain pickles and cover with syrup. Let stand overnight. The next morning, heat and pack in sterilized jars and seal.
