Well let's start with some breakfast recipes shall we?

Beignets

1/2 cup margarine
1 tsp sugar
1/4 tsp salt
1 cup water
1 cup plus 2 tbls flour
1 tsp vanilla
4 eggs
Oil
Confectioners' sugar

In medium pan heat margarine, sugar, salt and water to boiling. Remove pan from heat and add flour; stir vigorously until ingredients are combined thoroughly and dough leaves sides of pan and forms a ball. Add vanilla, then eggs one at a time, stirring vigorously. Dough should be smooth and glossy. In another pan, heat about 1 1/2 inches of oil to 375 degrees on thermometer. Drop heaping teaspoons of dough into hot oil and fry beignets, until golden brown. Note - beignets should turn over by them selves but if not turn several times. Drain on paper towles. Dust beignets with confectioners' sugar and serve warm. Yields about 32 beignets.

Bran Muffins

1 1/2 cups flour
3 tsp baking powder
1 tsp salt
1/2 cup sugar
2 cups bran cereal
1 cup milk
1/3 cup melted margarine/butter
2 eggs, beaten

Preheat oven to 425 degrees. Pour milk over bran and let stand 5 minutes. Add eggs and margarine and mix well. Add dry ingredients, beating only to mix. Fill greased muffin tin or paper muffin cups about 2/3 full. Bake for 25 minutes. Yields 12 muffins.

How about some great veggies and side dish recipes?

Corn Casserole

1 can cream style corn
2 eggs, well beaten
2 tbls milk
2 tbsp sugar
2 tbsp flour

Preheat oven to 350 degrees. Mix corn, sugar, milk and flour. Fold in beaten eggs. Pour into greased casserole dish. Bake for 1 hour.

Spicy Green Bean Casserole

2 cans french style green beans
8-10 slices of bacon cooked
1 medium onion chopped
1 can chopped Rotel tomatoes

Preheat oven to 350 degrees. Combine green beans, onion, Rotel tomatoes and half of the bacon in covered casserole dish mixing well. Sprinkle other half of bacon on the top. Cover and bake for 1 hour.

Cheesy Potatoes

2 lb. pkg frozen hash brown potatoes, partially thawed
1 cup grated Monterey Jack cheese
1/2 cup chopped onion
2 oz. jar sliced pimientos, drained
16 oz. sour cream
2 cups grated Colby cheese
1/2 cup chopped bell pepper
1 tbls chicken bouillon

Preheat oven to 350 degrees. In large bowl, combine all ingredients except 1/2 cup Colby cheese and mix well. Turn into buttered 13x9 inch baking dish. Bake 1 hour or until potatoes are tender. Top with remaining cheese and bake until cheese is melted. Let stand 5 minutes before serving

Chuck Wagon Bean Pot

1 lb. great northern beans
1 pkg ham cubes
1 large onion, chopped
1 tsp salt
14.5 to 16 oz. canned or stewed tomatoes
6 cups water

Rinse and sort beans. Combine all ingredients in pot and bring to a boil uncovered. Cover and simmer gently, adding enough boiling water to keep beans well covered for 3 to 4 hours.
