2 ea acorn squash | 2 Tbsp. chopped onion |
1/2 C. chopped celery | 1 Tbsp. butter |
1/2 C. chopped carrot | 1 C. cooked ham or 4-5 strips of bacon, cooked & diced |
Broth or milk | Salt and pepper to taste |
Bake squash whole in a 350 degree oven for 1 hour. Saute vegetables in butter until soft, stir in meat. Remove squash from oven when tender, cut in half lengthwise and remove seeds. Scoop squash away from the rind. In bowl, mix squash, salt, pepper and milk to get a fluffy texture. Combine with vegetable mixture. Stuff acorn shells with this stuffing mixture and bake for an additional 15 minutes.
