Armadillo Eggs

Ingredients
1/3 lb. Monterey Jack cheese, shredded 1 pkg. Shake 'n Bake for pork
1/2 lb. bulk hot sausage (Jimmy Dean) 1 lb. jalapeno or green chilies
1 1/2 C. buttermilk Bisquick mix 1 egg

Mix sausage and Bisquick. Slit and deseed jalapenos. Stuff with cheese. Pinch closed. Pinch off sausage. Make a little pancake approximately 1/4" thick. Wrap around pepper, roll around until it's like an egg. Dip "arm" egg in 1 beaten egg. Roll in Shake 'n Bake mix. Bake at 300-325 degrees for 25 to 30 minutes on a greased pan (cookie sheet).
