Chuck Wagon Stew

Ingredients
2 1/2 lbs. beef cubes (5 c.) 1-28 oz. can tomatoes
2 T. flour 2 to 3 T. chili powder
1 T. paprika 1 T. cinnamon
1 tsp. chili powder 1 tsp. ground cloves
2 tsp. salt 1/2 to 1 tsp. dry crushed red peppers
3 T. shortening 2 C. chopped potatoes
2 sliced onions 2 C. chopped carrots
1 clove garlic, minced

Coat beef in mixture of flour, paprika, salt, and 1 teaspoon chili powder. Brown in hot shortening in large Dutch oven. Add onion and garlic and cook until soft; add tomatoes, chili powder, cinnamon, cloves, and peppers. Cook covered over low heat (simmer) for 2 hours. Add potatoes and carrots and cook until vegetables are done, about 45 minutes. Makes 6 to 8 servings and freezes very well.
