2 1/2 lbs. beef cubes (5 c.) | 1-28 oz. can tomatoes |
2 T. flour | 2 to 3 T. chili powder |
1 T. paprika | 1 T. cinnamon |
1 tsp. chili powder | 1 tsp. ground cloves |
2 tsp. salt | 1/2 to 1 tsp. dry crushed red peppers |
3 T. shortening | 2 C. chopped potatoes |
2 sliced onions | 2 C. chopped carrots |
1 clove garlic, minced |
Coat beef in mixture of flour, paprika, salt, and 1 teaspoon chili powder. Brown in hot shortening in large Dutch oven. Add onion and garlic and cook until soft; add tomatoes, chili powder, cinnamon, cloves, and peppers. Cook covered over low heat (simmer) for 2 hours. Add potatoes and carrots and cook until vegetables are done, about 45 minutes. Makes 6 to 8 servings and freezes very well.
