Remove strips of cucumber using a potato peeler, or score entire cucumber with the tines of a fork. Slice into thin, even slices. Sprinkle with salt and let set for 5 to 10 minutes. Rinse and drain. Add vinegar and gently mix. For best flavor, cover and refrigerate for at least 30 minutes.
