Yankee Bacon Bake

Ingredients
1/2 pound sliced bacon 1/2 yellow cornmeal
1 cup milk 1/2 cup all-purpose flour
1 Tbp. sugar 1 tsp. baking powder
1/2 tsp. salt 1 cup milk
3 beaten egg yolks 3 stiffly beaten egg whites

Cook bacon till crisp;drain & coarsely crumble.
Set bacon aside. In saucepan, stir cornmeal into
the 1 cup milk; cook stirring constantly, till
mixture is thickened & bubbly. Remove from heat.

Stir together flour sugar, baking powder, & salt;
blend into cornmeal mixture. Stir in the remaining
1 cup milk & egg yolks; fold in the beaten egg whites
& crumbled bacon. Turn into a greased 1 1/2 quart
casserole or souffle dish. Bake, uncovered, at 325
degrees for 55 to 60 minutes.
