1/2 pound sliced bacon | 1/2 yellow cornmeal |
1 cup milk | 1/2 cup all-purpose flour |
1 Tbp. sugar | 1 tsp. baking powder |
1/2 tsp. salt | 1 cup milk |
3 beaten egg yolks | 3 stiffly beaten egg whites |
Cook bacon till crisp;drain & coarsely crumble.
Set bacon aside. In saucepan, stir cornmeal into
the 1 cup milk; cook stirring constantly, till
mixture is thickened & bubbly. Remove from heat.
Stir together flour sugar, baking powder, & salt;
blend into cornmeal mixture. Stir in the remaining
1 cup milk & egg yolks; fold in the beaten egg whites
& crumbled bacon. Turn into a greased 1 1/2 quart
casserole or souffle dish. Bake, uncovered, at 325
degrees for 55 to 60 minutes.
