Minestrone Soup



Minestrone Soup !
1/4 tablespoon wesson oil , 1 cup chopped onions, 2 cans 6 oz. tomatoe paste,
1 1/2 quarts water, 10 oz. of frozen peas, 1 cup cut carrots, 1 cup cut celery,
10 oz. can Campbells beef broth, 1 cup chopped cabbage, 1/2 teaspoon Fresh rosemary
(dried rosemary will change the flavor), 1 pound of kidney beans, and
1 cup of elbow macaroni (I like lots of macaroni so i use two cups).

Preparing the Minestrone Soup
Saute the garlic, onions, and celery in a 1/4 TBS. of oil. Once done sauteing, place
this mixture into a large soup pot and add tomatoe paste, water, carrots, peas,
fresh rosemary, beef broth, and cabbage. Bring this mixture to a boil, then lower the
heat, cover and simmer for 45 minutes. Now add in the kidney beans and macaroni, then
cover and cook for an additional 15 minutes.


For the Rest of our Italian Dinner
We will be having Bread Sticks, Tossed Green Salad, and Merlot.

Bread Sticks
Our favorite would be a soft bread stick. You can make them from scratch,
or get them from your favorite deli or bakery.

Tossed Green Salad
Living in California we have the freshest lettuce. Remove the core
from the head of lettuce and wash. Let it dry on a hand towel. Gently tear
the leaves and never touch with a knife as it will brown the edges. You can
use Iceburg , Romaine, or any combination according to your taste. With this
dinner we have chosen a light vinegarette dressing. Toss lightly , and serve chilled.

Glass of Merlot
For our Italian dinner we have selected a fine Merlot.

Wonderful aroma and a delicious taste to compliment our Minestrone.


This Minestrone Recipe is a family favorite all year round,
was first used as a hearty and nutritional dinner for our Christmas Eve.
It has now become a Christmas tradition for our family. With a large family
gathering of 30 or so, and at least 10 kids that can't wait to open presents,
this easy meal gives you time to visit instead of cooking over a hot stove.
Of course we triple the recipe for our Christmas Eve.
