Italian Rice Salad



This is one of the wonderful dishes Rossana cooked for us while we were visiting in Italy.

Italian Rice Salad
Cook according to the box enough rice for four people
1 can tuna fish drained
2 fresh tomatoes-diced
1/2 green pepper (cooked) Bake in an oven for 30 minutes and then peel.
1 wiener choped
1 hard cooked egg
1 scoop with your hand frozen green peas (1/2 cup approx)
1 spoonful capers (or green olives)
1 cup shreded swiss cheese
Cook the rice a little undercooked (al dente)
rinse in cold water and drain
Put in a large bowl and add 2 Tablespoons corn, juice of 1/2 lemon, 1 Tablespoon virgin
olive oil, and all the above ingredients
Chill and serve..
