This is one of the wonderful dishes Rossana cooked for us while we were visiting in Italy. Italian Rice Salad Cook according to the box enough rice for four people 1 can tuna fish drained 2 fresh tomatoes-diced 1/2 green pepper (cooked) Bake in an oven for 30 minutes and then peel. 1 wiener choped 1 hard cooked egg 1 scoop with your hand frozen green peas (1/2 cup approx) 1 spoonful capers (or green olives) 1 cup shreded swiss cheese Cook the rice a little undercooked (al dente) rinse in cold water and drain Put in a large bowl and add 2 Tablespoons corn, juice of 1/2 lemon, 1 Tablespoon virgin olive oil, and all the above ingredients Chill and serve..
