Making Cider


Stuffed Tomatoes (1894)


Ingredients

6 large tomatoes

1/2 cup finely chopped chicken

(cooked) 12 chopped mushrooms

2 heaping tablespoons bread crumbs

1 tablespoon chopped parsley

1 tablespoon melted butter

Remove small circular piece from top of each tomato. Remove seeds with fingers, being careful not to spoil the shape. Mix remaining ingredients and fill cavities. Place in baking dish and bake 30 minutes in a moderate oven, basting with melted butter. Serve with cream.
