SOPAPILLAS

1-3/4 cups flour
2 tsp baking powder
1 tsp salt
2 T shortening or lard
2/3 cup cold water
2 T sugar
2/3 cup cold water
oil for frying

Sift flour, baking powder and salt into bowl. Cut in shortening or lard until crumbly. Gradually add enough cold water to form dough. Knead gently on lightly floured surface until smooth. Let rest, covered, for 5 minutes. Roll into 12x15" rectangle. Cut into 3"x3" squares. Drop a few pieces at a time into 400 degree oil. Fry for 2 to 3 minutes on each side until puffed, turning several times to brown evenly. Serve with honey or powdered sugar on top.
