RECIPE NAME:  BOMBAY CURRY MIXTURE

 INGREDIENTS:
4 to 5 small (to make 1 teaspoon when ground) chilies dried
1x4 (5 cm) (1 1/2 inch) piece cinnamon stick -
4 1/2 tablespoons whole coriander seeds -
1 teaspoon whole cumin seeds -
1/2 teaspoon whole fennel seeds -
2/3 teaspoon whole fenugreek seeds -
1/2 teaspoon garlic powder or granules -
2 2/3 teaspoons turmeric ground
2 - kokum skins -
2 - curry leaves crushed
 
DIRECTIONS:
  •  Lightly roast together the first six ingredients, then grind and mix with the garlic and the turmeric.
  • Use according to recipe instructions, adding the kokum skins and the crushed curry leaves directly to the cooking pot, removing the kokum skins before serving.
Notes: This mixture can be used with the Curried Chicken Mayonnaise recipe.
