Defense is used to waste the attacker's resources, and have no attackers reach your more important buildings/units.
Use humans for better defense, you can polymorph air attacks, and use exorcism on death knights who are use death and decay on your defenses. But if you are orc, you can have runes to protect your surroundings, and raise dead(it cost only 50 magic) after a big on-slaught.
There is one key thing for defense, and that is guard towers. If you want to add more to that, here it is...
Put farms or walls around any attacking towers.
Always put cannon towers behind another building, best if it is a guard tower. The best order is : farms==guard towers=cannon towers
Have 1-3 peons near your towers to repair them, or to attack catapults, when they bully your towers.
Option: Have 1-3 catapults to attack enemy catapults or archers. If you are going to have catapults, put them a bit back, or else they will over-shoot running units.
Magic is the second line of defense. Blizzard the area where attackers are now destorying the first line of defense. They should at least be half-hurt. If some guys come after your mages, use anything you have to stop them, because mages are expensive.
Have about 3 gryphons in your town if your spies report that your enemy player is building up a very large army. Usually, armies are made of paladins or bloodlusted orges and catapults. The other player won't be including much air-attackers. Sometimes when a huge army comes at me, I shoot at archers with my catapults and then use the gryphens to chase the army off.
If you are up against a human player, build one wall at every part where you defense buildings are, so that sappers can't take down 2-3 buildings at a time. Also remember that invisiably and unholy armour destorys sappers.
Try to surround your town completely with defenses, and leave only 1-2 gap to have your units get out. Sometimes, if you are orc, make another larger more looks-weak gap for the enemy to come in to, and then put runes on that a lot.
