Chicken in Barbecue Sauce

Ingredients

1 chicken joint per person. These measurements assume four joints.

1 medium sized onion
1 large clove of garlic
30mls tomato puree
45mls soy sauce
75mls dry cider
25g soft brown sugar
5mls mustard powder
Black pepper
Oil

Instructions

  • Preheat oven to gas mark 6 or 200 degrees C

  • Skin chicken joints. Wipe with damp kitchen paper and then dry them on another sheet of the same.

  • Rub all over with oil, then season with black pepper. (No salt needed - the sauce will be salty enough)

  • Place joints in an oven-proof casserole dish.

  • Peel and chop onion.

  • Add onion to chicken joints and sprinkle with a little oil.

  • Cover with the lid of the casserole dish and cook for thirty (30) minutes.

  • While the chicken is cooking, make the sauce. Cream the garlic and add to all the other ingredients in a small bowl. Mix well.

  • Pour the sauce over the chicken and cook covered for a further 25 minutes.

This is good served with plain boiled rice and a green side salad.
