Cheese Potatoes

These are a bit fancier than your average baked potato, just as easy to make, and very nice to eat.

Ingredients

1 medium size potato per person
For each potato:
25g cheese
5g margarine or butter
1 tablespoon milk
seasonings

Instructions

  • Preheat oven to Gas mark 6 or 200 degrees C

  • Scrub potatoes. Score round each with a sharp knife or prick with a fork to prevent it all bursting when you cook it.

  • Bake for approx 1 hour until soft, or microwave for about 10 minutes.

  • Preheat grill, and grate your cheese.

  • Cut potatoes in half lengthways. Scoop out the potato and leave the skin where it is, you will be using it later.

  • Put potato in bowl, mix it with butter, (or margarine), milk, seasoning and three quarters of the cheese. Mix it well.

  • Refill the skins with the mixture and smooth over the surface with a knife.

  • Sprinkle the left over cheese over the top.

  • Grill until the cheese has melted and the surface is golden brown.
