Marmalade Cake

I'm ashamed to say this, but I can't actually remember what this tastes like! I don't remember anything I cooked that was really disgusting (except reheated macaroni - bleugh!) so it should be ok.

Ingredients

225g self raising flour
5mls mixed spice
100g castor sugar
The grated rind of 1 orange and 1 lemon
150g dried fruit
6 tablespoonfuls of milk
1 rounded tablespoon (i.e. don't go smoothing it to make it flat with a knife flat or anything) thick marmalade
50g margarine
50g lard
1 egg
5mls vinegar
Demerara sugar for topping

Instructions

  • Preheat the oven to gas mark 4 or 180 degrees C

  • Sieve flour, spice and salt into a bowl

  • Rub in the fats (the marg and the lard)

  • Add sugar and fruit and mix well

  • Grate the rinds into the mixture and stir.

  • Add milk and vinegar, stirring again.

  • Finally stir the marmalade well in.

  • Place into a prepared tin (grease the bottom and sides with a bit of butter or something, then line the bottom with greaseproof paper), either a round or oblong tin will do.

  • Coat the top thickly with demerara sugar.

  • Bake for one (1) to one and a quarter hours, until well risen and set.

  • Turn it onto a cooling tray if you have one, otherwise let it cool elsewhere.
