Quiche Lorraine
Quiche is a handy dish. It can be eaten hot or cold, with a variety of side-servings, or on its own. It can be a meal or a snack. Even if it does look like "sick in a pastry case", as my mother puts it, it still tastes nice! All in all a useful dish to be able to make.
Some of the instructions for this seem a little garbled...Its been several years since I last made this, and the instructions in my recipe book are written in a child's hand (mine, I think) and aren't very good!
Ingredients
150g plain flour
50g hard margarine/butter
25g lard (ugh, but necessary)
Cold water to mix
2 rashers of bacon
1 onion/ 50g mushrooms
1 egg
125mls milk
50g cheese
seasoning
Instructions
- Preheat oven to 200 degrees C or gas mark 6
- Make the pastry. Line a flan ring or dish (approx. 14cm or 6 and a half inches)
- Rind and chop the bacon. Dice the onion or mushrooms. Gently fry all together for a few minutes. Put all of these into the flan case.
- Beat the egg and milk together. Add seasoning. Pour into the pastry-dish.
- Grate the cheese and sprinkle it on the top.
- Cook for 25-30 mins until set and golden.
