Shepherd's Pie

A good, filling, easy to make dinner.

Ingredients

500g mince
200mls stock (1 stock cube + water)
1 large onion
25g flour
500-700g potatoes
50g margarine
30-60mls milk
25g grated cheese (optional)
Grated nutmeg
2.5mls marjoram
Gravy browning (optional)
Salt and pepper

Instructions

  • Chop onion. Melt half of the margarine in a saucepan.

  • Saute the onion until soft, but not browned.

  • Add mince and "fork" over the heat, until the grains are separate and browned.

  • Add flour, herbs and seasonings and mix well.

  • Gradually add the stock. Stir until boiled and thickened.

  • Adjust seasonings and add browning, if desired.

  • Leave on a low heat to simmer until cooked (approx. 40 minutes)

  • Scrub and peel potatoes

  • Boil the potatoes until soft (approx 20 mins)

  • Drain. Add milk, nutmeg, margarine and seasonings.

  • Beat until free from lumps.

  • Place cooked meat in a pie dish. Cover with the creamed potatoes.

  • Decorate potato topping with a fork (usually in a wavy pattern, but whatever takes your fancy, really) Sprinkle with the grated cheese, if desired.

  • Grill until golden brown.

You can make this using left-over meat and potato, if you like.
